Michelin Guide 2026: 25 Spanish Restaurants Receive Their First Star

The Michelin Guide awarded its coveted stars to the best Spanish restaurants this Tuesday at a ceremony held in Málaga.

Five criteria were considered when awarding the stars: the quality of ingredients, harmony of flavors, mastery of technique, the chef’s personality reflected in the dishes, and, above all, consistency.

There are no new three-star restaurants. However, the 16 Spanish restaurants with three Michelin stars retain their place in the culinary elite.

Twenty-five restaurants join the Guide with one star, including Seve Díaz (Puerto de la Cruz, Tenerife), Faralá (Granada), Mare (Cádiz), Kamikaze (Barcelona), and Islares (Bilbao).

Additionally, five restaurants received two stars for the first time:

  • Aleia (Barcelona), by chefs Paulo Airaudo and Rafa de Bedoya.
  • La Boscana (Bellvis, Lleida), by Joel Castañé.
  • Mont Bar (Barcelona), by Francisco José Agudo.
  • Ramón Freixa Atelier (Madrid).
  • Enigma (Barcelona), by Albert Adrià.

The spanish 2025 Michelin Guide features a total of 1,251 restaurants: 16 have the top award, 33 have two stars, and 242 have one star.
